Kale salad

Kale Salad

Collard...... 1 large bunch (approx. 500g)

Cherry tomato ...... 1 cup

Avocado...... 1 pc

Sauce

Lemon juice...... 1/3 cup

Himalayan rock salt (for seasoning) ...... 1/2 teaspoon

You can add as you like:

Garlic (chopped) ...... 1 petal

· Preparation ·

1. Remove the kale, tear it into small bites and place it in a bowl.

2. Add the sauce ingredients to the kale, rub by hand for 1-2 minutes until the sauce is evenly coated with kale leaves, then let it sit for 30 minutes until it softenes.

3. Dice the cherry tomato and avocado, stir with the kale and enjoy.

Tips:

1. It tastes better with quinoa.

2. Remember to rub kale and sauce with your hands to help break down the fibre and make it easier to chew.

3. It can be made the day before serving and then put in the freezer overnight for better taste.

Colorful kelp salad

Rainbow Seaweed Salad

Dried kelp (pre-soak for 1 hour, drained) ...... 1 cup

· Preparation ·

1. Place all salad ingredients (except the sesame seeds) in a large bowl.

2. Mix all the sauce ingredients, pour into the salad and mix well.

3. Leave the salad for at least 30 minutes to get better, and finish with sesame seeds before serving.

Tips:

1. Kelp can be substituted with kelp, kelp noodles or dried spirulina.
