1. Remove the kale, tear it into small bites and place it in a bowl.
2. Add the sauce ingredients to the kale, rub by hand for 1-2 minutes until the sauce is evenly coated with kale leaves, then let it sit for 30 minutes until it softenes.
3. Dice the cherry tomato and avocado, stir with the kale and enjoy.
Tips:
1. It tastes better with quinoa.
2. Remember to rub kale and sauce with your hands to help break down the fibre and make it easier to chew.
3. It can be made the day before serving and then put in the freezer overnight for better taste.
